Recipe - Okonomiyaki
Ingredients
1/2 of a green cabbage
2 cups of all-purpose flour
1 tsp baking soda
2 tsp mushroom seasoning or bouillon flavoring
2 tbsp Soy sauce
2 green onions finely chopped, with the green ends saved later for toppings
1 large egg or 2 small eggs
1 ½ cup water
Add whatever any finely chopped veggies or ingredients you like, but if you add meat make sure it’s pre-cooked
Some good options I’ve tried are:
Shredded carrots
Shredded squash
Cooked sausage/chorizo
Corn niblets
(Optional) Uncooked Bacon
Butter/Olive Oil/Any Oil you prefer

Optional: Japanese mayonnaise (Kewpie brand)
Instructions:
Add flour, baking soda, bouillon flavoring, and green onions into a large mixing bowl and mix until well combined. Next, add the soy sauce, water, and eggs to the flour mixture and whisk until well combined.
Add the cabbage to the batter along with any bonus ingredients (i.e. shredded carrots, etc.) if you have any. Stir until everything is coated in the batter evenly. If it doesn't feel like there's enough batter to coat everything fully, you can add flour and water as needed, or even an extra egg.
Using a cup or 3/4 cup measure, scoop the mixture into an oiled skillet on medium heat. Shape into a circle. Place bacon (or an alternative) on top of the pancake on the skillet to cover the top of the pancake. Let the pancake cook through on one side before flipping. Covering the skillet with a lid or aluminum foil will help it cook through faster.
When the pancake is cooked enough to be able to be flipped without falling apart, and preferably if it's beginning to brown as well, then go ahead and flip it. Allow to fully cook through, flip as needed to achieve browning on both sides, then turn the pancake onto a plate (bacon side up)
Coat top of pancake with okonomi sauce, then sprinkle on green onion ends. Optionally, you can get Japanese mayonnaise to put on top too if that's your thing.
